Responsible for CAD (Computer Aided Design) design of both front and back of house for a Casino placed within a hotel based in the capital of Suriname South America. Responsibilities ranged from recruitment of local and international labour, design, training, supply chain, menu design and implementation of best practice and quality control. Also compiling a complete hotel audit through to rewriting the companies training and standards manual.
 
International Institute of Agriculture
Spending some weeks providing an independent overview of hospitality opportunities within a major international development complex which, due to the nature of its work, had a large number of Expatriates on site. Involving hotel and international guest visits, food supply chain training and strategic planning e.g.
Use of Agricultural study to produce crops for consumption on site.
Controlled fishing for the table from the sites lake.
Setting up Swiss links for managerial students to man and train front of house staff.
Security of on site commissary Upselling opportunities for on site expatriates.
Effective and safe food supply chain from importers and local markets.
Safety audit Front and Back of house.
Columbia Ship Management, Cyprus
A multinational German based company with interests in cruise liners/ship management contracts, including the overall manning of the Cunard Line. Responsible for the maintenance of a comprehensive training service offering advice, completing forecasts and commissioning of extensive hotel projects. Instrumental in the completion of evaluations, and commissioning of a 5*Hotel in Cyprus, with the overseeing of another Hotel Kitchen opening in Germany.
 
Royal Brunei Catering. Brunei. South East Asia
The leading instigator of the improvement of the countries beef products by instigating a Brunei manned Abattoir in the Northern territories for Australia, where the Sultan owned a Cattle Station, thus enabling slaughtered meats to be shipped to Brunei by container or air, alleviating the stresses, weight loss, disease and risk of ferrying live cattle through differing climates and elements; proving to greatly affect the end product. Also provided the imputs in the conversion of the countries abattoir from Australian beef to Indian and so providing a cheaper source for the wet markets and also building a reputable retail product into the market place with bi-products. Also instrumental in the consistent food service operations of the National Children's Food Festival involving the entertainment and multiple restaurant facilities for some 20,000 visitors.
 
World Barbecue Championships
Acting in the capacity of International Head Judge over many years to train and promote good Barbecue internationally. E.G. 2004 Wrote the scoring system and amended the constitution and rules for the association, including training and briefing some 390 judges to officiate over 65 international teams in the world championships; culminating in 80,000 visitors attending the event.
